Cornicabra

Cornicabra oils have a remarkable balance between sweet at the entrance, bitter to green leaves and spicy medium intensity. They are stable oils due to their high content of fatty acids. Also called cornice, this variety is native to Mora de Toledo and is the second most cultivated variety. The name comes from the horn shape of this olive. It is cultivated in the provinces of Toledo and Ciudad Real, and gives rise to the D.O. Montes de Toledo. It is a drought-resistant fruit, as well as frost and harsh cold. Its oils have a greenish yellow color and have fruity aromas and fine almond flavors, showing average values of bitter and spicy.
