Empeltre

The Empeltre variety is grown mainly in Lower Aragon where it occupies approximately 85% of the counties. Its growing area ranges from the provinces of Logroño and Teruel through the Ebro Valley to the province of Tarragona, also cultivating itself in the Balearic Islands. It is one of the oldest olive trees in Spain. It can reach a large size, although its rooting capacity is low, so the use of graft is imposed as the main method of expansion. In fact, the etymology of the name is found in the Catalan word "empelt" whose meaning is graft. Its leaves are dark green and very bright; its jet black olives are suitable for both consumption and table olives and oil production. Its fat yield is around 18%. The ripening of its fruits is early, from the first week of November to the first of December. Its oil, colored between straw yellow and old gold, is fluid textured, with a mild fruity smell (especially apple) and delicate, sweet and somewhat almond flavor that almost never present bitterness or itching, so they are very pleasant in the mouth.
