Especially fruity oil, fluid, slightly green and moderately bitter, spicy and somewhat sweet, with aromas of green apple, freshly cut grass and memories of banana, almond and tomato.

Olive oil produced in Dilar, within Sierra Nevada National Park, in the province of Granada, a region with a long olive oil production tradition in which the most typical olive variety is called picual, picudo and hojiblanca. The production system is endorsed with the Certificate of Quality and the Integrated Production Seal, both granted by the Regional Government of Andalusia. This oil is produced in very modern and new mill, administered by the family Gil Velasco. Due to the property's geographic situation, at 1000 m altitude, and so as to avoid the damage that can be caused by snowfalls and frosts, the olives are harvested in October, when they still show a green colour.
