Fruity medium-high, with a good balance in the mouth among spicy, bitter and sweet. Slightly astringent, which can make it seem less sweet than it actually is, but without fatiguing. Very pronounced secondary aromas of grass and vegetables (artichokes, almonds and green herbs) with a touch of ripe banana. Pleasant and harmonious .
Handmade organic oil extracted from olives that grow between dry stone walls, rocks and ravines in the impressive surroundings of the western slope of the Sierra del Montsant, Tarragona in the Priory. Elaborated primarily with olive  Rojal and some negret and arbequina. Rojal is a vigorous variety, productive, tolerant to cold and pests in your area and sensitive to drought which is grown a week before the Arbequina. It has a good fat yield and the oil is considered of excellent quality, stable and somewhat bitter for what is often mixed with the Arbequina.
