The Salt Valley of the Alavesa town of Añana is one of the most spectacular salt cultural landscapes in the world. Its value lies not only in its architecture or in its more than 1200 years of history, nor in its landscape and environmental characteristics, but in the union in perfect harmony of all this in a privileged context. These salt flats are located in the oldest village in the Basque Country, and on the salt remains of an ancient sea that covered this area 200 million years ago. It is now a unique cultural landscape with more than 5,000 slowly constused evaporation plataphores with stone and wood over the centuries. On them, the salineros deposit salt water from the springs to produce this salt by natural evaporation. In the second half of the twentieth century these salt flats were abandoned. Today, in an ambitious recovery project, promoted by various public and private institutions, and not for profit, these salt flats are being returned to life. One of the activities is to produce high quality salt and put it on the market in its rightful place. To do this, they have the active support of great restaurateurs who have decided to support the project, such as Martín Berasategui, Pedro Subijana and Andoni Ruiz. The purity of the mineral salt is due to both the raw material and its artisanal production process. The brine that sprouts from the manatials comes from ancient deposits of solid salt that formed when a sea dried more than 200 million years ago. There the sun and wind slowly evaporate the water, then collect it and pack it in the valley itself. In 1851, salineros presented this product at the London World's Fair, where they were awarded for their quality.
