The Salt Valley of the Alava town of Añana is one of the most spectacular salt cultural landscapes in the world. Its value does not lie only in its architecture or in its more than 1200 years of history, nor in its landscape and environmental characteristics, but in the union in perfect harmony of all this in a privileged context. These salt flats are found in the oldest town in the Basque Country, and on the remains of salt from an ancient sea that covered this area 200 million years ago. It is now a unique cultural landscape with more than 5,000 evaporation platforms slowly built from stone and wood over the centuries. On them, the salineros deposit the salty water from the springs to produce this salt by natural evaporation. In the second half of the 20th century these salt flats were abandoned. Today, in an ambitious recovery project, promoted by various public and private, non-profit institutions, it is being possible to bring these salt flats back to life. One of the activities is to produce high-quality salt and put it on the market where it belongs. For this, they have the active support of great restaurateurs who have decided to support the project, such as Martín Berasategui, Pedro Subijana and Andoni Ruiz. This Flower of Salt is made up of irregular flakes of pure salt obtained by 100% natural methods. It is made in the summer months using artisanal techniques developed by the salineros for centuries. The flowers originate at the beginning of the crystallization process, when thin and irregular sheets are formed on the surface of the brine and are harvested by hand.
